    An easy toddler meal idea and a great way to get your toddler to eat more veggies: try a toddler breakfast burrito!

    Breakfast burritos are a versatile and easy option for breakfast, lunch, or dinner. Use whatever veggies and sides you have in your fridge and pantry and serve whatever veggies your toddler likes. If the list is small, try using just one veggie and adding more in over time to help introduce new foods frequently.

    Step 1: Chop Veggies

    Start by chopping up all your veggies. You can also use frozen veggies to save time. Use whatever your toddler likes (or throw in something new if you are trying to introduce new foods) and shoot for a variety of colors.

    Here are some of our favorites, but anything goes:

    • Bell pepper
    • Sweet potato
    • Red onion
    • Broccoli
    • Zucchini
    • Corn

    Step 2: Cook Veggies in Butter or Olive Oil

    Heat up 1-2 Tbsp of butter or olive oil in a large frying pan. Add your veggies and cook on medium heat until tender (about 10-12 minutes), stirring frequently.

    While your veggies are cooking whisk 8 eggs in a separate bowl.

    Step 3: Add in Eggs

    Once your veggies are cooked, push them aside (or scoop into a separate bowl if your pan is small). I like to add an additional 1 Tbsp of butter or olive oil. Pour in your whisked eggs and cook them until set.

    Once your eggs are cooked stir them together with the veggies. Season with salt and pepper.

    Top with cheese and diced herbs (cilantro or parsley work well).

    Step 4: Add Scramble to Tortilla

    Scoop a small amount of egg mixture (about 2-3 Tbsp) into a small tortilla. You want to keep it small so it’s toddler-friendly.

    Step 5: Cut and Serve

    Roll up tightly and cut in half so it’s easier for your toddler to handle. Serve with sides of avocado, salsa and/or sour cream (or whole milk greek yogurt) for dipping.

    Ingredients

    Note: This recipe serves 3-4, so if you are making it only for your toddlers you might want to cut it in half.

    • 2-3 Tbsp butter or olive oil
    • 1 medium bell pepper
    • 1 small sweet potato (about 1 cup diced)
    • 1/4 cup red onion, diced
    • 1 cup broccoli, diced
    • 1 small zucchini
    • 1 cup frozen corn
    • 8 eggs
    • 1/2 cup shredded cheese
    • 2 Tbsp diced herbs (cilantro, parsley, ect)
    • 8 medium tortillas
    • Optional: sour cream or salsa for dipping

    Instructions

    1. Dice bell pepper, sweet potato, red onion, broccoli, and zucchini. Measure out 1 cup of frozen corn.
    2. Heat 1-2 Tbsp of butter or olive oil in a large pan over medium heat.
    3. Add veggies and cook until all veggies are tender, about 10-12 minutes, stirring frequently.
    4. While veggies are cooking whisk together 8 eggs in a medium bowl.
    5. Push veggies aside (or move to a bowl if your pan is too small), pour in eggs and cook until set, stirring frequently.
    6. Once eggs are cooked stir them back in with the veggies. Season with salt and pepper. Top with cheese and herbs.
    7. Scoop out 2-3 Tbsp in a medium tortilla for your toddler’s serving, tightly roll up, and then cut in half.
    8. Serve with sides of sour cream or salsa for dipping!

    Bonus: try a deconstructed version for young toddlers, make a breakfast quesadilla, or try serving the tortilla on the side so your toddler can make their own breakfast taco or burrito.
