This recipe is so fun, yet satisfying, and is also quick and easy! You will be coming back to it again and again and might even add it to your weekly meal rotation!

What Type of Tortillas Do You Use?
Pretty much any tortillas will work for these peanut butter strawberry banana quesadillas! I do recommend flour tortillas for their lighter texture and they are generally larger (we use soft taco size or burrito would work as well).

Can I Sub for Other Fruit?
Yes! We love the traditional strawberry banana filling, but here are some other fruits that we feel would work well in this recipe:
- banana + blueberries
- banana + blackberries
- banana + raspberries
- steamed apples or pears
- peaches
What Type of Peanut Butter do You Use?
We recommend using natural peanut butter, but any peanut butter should work here (even crunchy!). Read your peanut butter label and look for brands that include only peanuts and salt and no added sugar.
You could also try using different nut butters for a different savory taste. Almond butter would be great here!
Peanut Butter Strawberry Banana Quesadilla
Ingredients
- 1 flour tortilla (soft taco size or larger)
- 1/2 Tbsp peanut butter
- 1-2 strawberries, sliced
- 1/4 banana, sliced
Instructions
- Heat a frying pan large enough to hold your tortilla over medium-low heat.
- Skip this step if you are using pre-cooked tortillas. If you are using an uncooked tortilla, cook on one side for about 60 seconds until cooked through and slightly crispy, then remove from pan.
- Spread peanut butter on one side of your tortilla (if you are using uncooked tortillas, spread peanut butter on the side you just cooked).
- Sprinkle sliced strawberries and bananas on one half, then fold in half.
- Place folded quesadilla in pan and cook for 60-90 seconds or until the bottom is cripsy.
- Flip over and continue cooking the other side for an additional 60-90 seconds until crispy.
- Remove from pan, cool for a few minutes, and slice in half or thirds.
Serving to Toddlers
My toddlers love this peanut butter strawberry banana quesadilla and I love that it includes a healthy fat from the peanut butter and serving of fruit! I normally serve with hearty sides like whole milk (full-fat) greek yogurt and cucumbers.
